Mexican Tuna Tacos | John Quilter

Food Busker is back on the busk - today in Spitalfields Market in 's East End. But what will they make of his taco twist?

Ingredients
For the pickled onions
1 red onion, peeled
Cider vinegar

For the tuna filling
300g sushi-grade tuna steak
1 banana shallot
1 tbsp jarred green jalapeno peppers
1 tbsp jarred red jalapeno peppers
1 tbsp capers
1 tsp paprika
Zest and juice of 1 lime
1 tsp rapeseed oil
1 tbsp chilli sauce
1 tsp soy sauce
Handful of coriander

For the garnish
1 red chilli
2 spring onions
1 avocado
a red cabbage
Small soft torillas
Twist of coriander
Sour cream
Paprika
1 lime, quartered

Method
Half and finely slice the red onion, and place in a small bowl. Pour over the cider vinegar until the onions are submerged, and set aside to pickle.

Dice the tuna steak into small cubes and place in a large bowl. Finely chop the shallot, jalapenos and capers and add to the tuna. Add the paprika, lime zest and juice, oil, chilli sauce and soy sauce. Finely chop the coriander and add to the mix, with a sprinkle of good sea salt and some freshly ground black pepper. Stir to evenly distribute the ingredients.

Slice the red chilli into rounds and set aside, and cut the spring onions into matchsticks and place in a small bowl of cold water to crisp up. Halve and peel the avocado, and slice into segments. Finely slice the red cabbage.

Heat a small frying pan over a low heat, and warm the tortillas individually.

Layer each tortilla with a small handful of red cabbage, a generous spoonful of the tuna mix, coriander leaves, spring onions, a few red chillies, two avocado slices and some of the pickled red onions, strained. Finish with a teaspoon of sour cream on top, and a sprinkle of paprika. Serve immediately, with the lime wedges on the side.
