Ingredients
For the garnish
1 mango
1 avocado
1 pomegranate
an iceberg lettuce
1 red chilli
2 garlic cloves
1 lime
200g raw prawns or shrimp
Butter
1 tsp vegetable oil
4 small soft taco shells
Chilli powder
Twist of coriander
Method
Firstly, prepare the garnishes. Cut the mango into three pieces, removing the hard core. Score the flesh with a knife to form cubes, scoop out with a spoon and set aside. Halve the avocado and cube the flesh similarly. Halve the pomegranate, and using the back of a spoon, hit the shell to encourage the seeds out. Remove the core from the iceberg lettuce and discard; slice the remainder thinly and set aside.
Dice the red chilli. Using a sharp knife, finely chop the garlic cloves. Sprinkle with a little salt and add a drop of vegetable oil, and use the blade of your knife against your chopping board to crush the garlic to a paste. Zest the lime, cut the fruit into six wedges and set aside.
Dry the prawns in a clean tea towel this will encourage them to crisp up in the pan.
Heat a frying pan over a medium/high heat, with a knob of butter and the vegetable oil. Add the shrimp with the chilli and garlic and cook until bright pink.
Meanwhile, place the taco shells on a large sheet of tin foil. Sprinkle over a teaspoon of water, envelope the shells in the foil, and place into a dry frying pan over a low heat to steam.
Squeeze the juice of one of the lime segments over the prawns, and sprinkle with the zest. Remove from the heat.
Carefully remove the taco shells from the frying pan. Layer each with the iceberg lettuce, shrimp, avocado, mango and pomegranate. Garnish each with a sprinkle of chilli powder and some coriander leaves. Serve with the lime wedges on the side.
