Party people! I am back with a kick ass leftover dish. Who doesn't like making the most of their leftovers, so I have done an incredible twist on bubble and squeak.

RECIPE
Ingredients
For the bubble and squeak
2 rashers of streaky bacon, fried until crispy and diced (retain the frying fat)
Large handful of cold mashed potato
Handful cooked white cabbage, roughly chopped
Two cooked corn cobs, corn sliced off in shards
1 small red onion, diced
Handful raw baby leaf spinach, roughly chopped
Twist of flat leaf parsley, finely chopped
Pinch dried chilli flakes
1 tsp minced garlic
1 tsp smoked paprika
Method
In a large bowl, mix together the crispy diced bacon, potato, cabbage, corn, onion and spinach, including the bacon fat from the frying pan, but reserving a few sweetcorn shards. Season with salt and pepper, and stir through the chilli flakes, garlic and smoked paprika. Using your hands, shape into even-sized patties.
Bring the pan used to cook the bacon up to a medium heat and drizzle with rapeseed oil. Cook the patties for 1 minutes on each side, and set aside.
Whizz the sweetcorn relish ingredients together in a mini food processor and set aside.
Fry an egg to your liking with some streaky bacon, and serve over two bubble and squeak patties, with a drizzle of the sweetcorn relish and garnished with the remaining sweetcorn shards.
